healthy chicken laksa
Try this Laksa – a hot and creamy curry-style dish with amazing spices! Easy to adapt for spice lovers and those who don’t like it too hot.
Ingredients for four people:
TS = Tea Spoon
TBS = Table Spoon
500g boneless chicken thigh
1 clove of garlic
1 red onion
1 small ginger
1 chili (dried or fresh)
1 TS coriander powder
1 TS cumin
2 TS turmeric
1 TS paprika
2 TBS fish sauce
2 Star anises
1 dl of chicken broth
1 TBS brown sugar
4 TBS sesame oil
7 dl coconut milk
Fresh coriander to decorate
Preparation
Cut the meat in small chunks and brown from each side – just sear them shortly, they will finish in the sauce later.
Paste:
Grind the coriander powder, cumin, turmeric and paprika in a mortar, add a little sesame oil and and blend with the chili, ginger and onion to a very fine paste.
Sear the paste in sesame oil for five minutes, add the star anis and deglaze with the chicken broth and coconut milk – let it simmer for about ten minutes until the sauce thickens.
Season with the fish sauce, and add some soy or salt to taste.
Add the chicken and let it simmer for another five minutes. Remove the star anis and garnish with fresh coriander.
Serve indian Naan or rice – enjoy!
