alpine cheese & ham quiche
As a kid, we used to have this quiche on a regular basis for dinner, served with endive salad. It is simply delicious, and prepared within 15 minutes only (before baking it). A comfort food masterpiece!
Ingredients (serves 4):
1 round puff pastry
Five slices (or more) of cooked ham
8-10 button mushrooms (sliced)
1 onion (chopped)
100g of Gruyère cheese (grated)
150g of any other Swiss alpine cheese* (grated)
1 plain yoghurt (180g)
1 egg
1.5 dl milk
1 TBS of flour
Salt, pepper and nutmeg
*you can use any kind of semi-hard cheese, but make sure to use both, a mild and a strong flavored cheeses.
Preparation:
Sear the onion and mushrooms in a bit of butter and olive oil on a medium heat until golden. Set aside to slightly cool down, then drain the water.
Mix the cheese with the yoghurt, egg, milk and flour and mix well with a spoon. Season with salt, pepper and a bit of nutmeg.
Place the puff pastry on a round baking tray (use baking paper) and pierce the dough. Then arrange the ham evenly on the pastry. Spread the mushroom-onion-mixture on top, then add the cheese mix on top and disperse evenly with a spatula.
Bake for 35 minutes at 200 degrees – let cool off for about ten minutes before serving.
