panna cotta

It is so simple, and so quickly prepared. All you need are a few ingredients and some time to let it sit in the fridge - done! 

Ingredients:

- 2 gelatine leaves

- 5dl cream (full fat)

- 1 vanilla pod

- 25g white sugar

- 1 TBS vanilla concentrate

 

Place the gelatine in a bowl with cold water until soft. 

Pour the cream, the vanilla seeds (cut lengthwise and scrape out the seeds with the back of a knife), the leftover and empty vanilla pod and the sugar in a pan and bring to simmer. After five minutes, take out the vanilla pod.

Squeeze the gelatine leaves to get rid of the water and add to the hot cream, together with the vanilla concentrate*. Stir well until the gelatine is dissolved. 

Fill the hot mixture into the ramequins or jars, then let them firm up in the fridge for a few hours.

*This vanilla concentrate is easily home made: Just place a few vanilla pods (cut open lengthwise) into a small bottle filled with vodka, close firmly and let it rest for about three months. It will become dark and then is ready to use, for all kind of desserts to add a touch of vanilla.
