japanese miso shiitake rösti
Ingredients for 4 people:
100g shiitake mushrooms, thinly sliced
250g Swiss Délice Rösti classic
2 eggs (poached)
0.5 onion, thinly sliced
1 TBS red miso paste
3 TBS rice vinegar
1 TBS soy sauce
2 TBS honey
Japanese 7 spices (spice mix) - or if not available, mix some nutmeg, pepper, chili and coriander seeds.
Prepare the Rösti in small portions as indicated on the back of the pack, then keep warm in the oven at 80 degrees.
In a frying pan, add some sesame oil and roast the mushrooms and onions for about five minutes on medium heat, set aside.
In the same pan, without cleaning it, deglaze with the vinegar and add the soy sauce, bring to boil, then add the miso paste (diluted in 4 TBS of hot water) and honey - reduce the temperature to low heat - stir well.
Add the mushrooms and onions into the reduction and switch of the stove – keep warm.
Poach the eggs and set aside.
Dress the mushrooms on top of the Rösti fritters, carefully place the egg on top and sprinkle with 7spices. Meat lovers can add some crispy bacon on top.
