rhubarb chocolate cake
A moist, fruity chocolate cake - a feast for summer! My colleague Tanja from the office kindly shared this great recipe with me.
- 300g rhubarb
- 100g butter
- 130g sugar
- 100g black chocolate
- 200g flour
- 0.5 TS baking powder
- 1 sachet vanilla sugar or liquid
- a pinch of salt
- icing sugar for decoration
Peel the rhubarb and cut into chunks of about 2x2 cm (not too small as they will get lost in the cake).
Mix in a bowl the butter, eggs, salt, sugar and vanilla sugar and stir for three minutes until foamy.
Add the flour and baking powder (just a little bit!) and stir again until smooth. Now add the chocolate (cut into small cubes with a big knife) and the rhubarb and mix well.
Pour into a buttered cake form and bake for 45 minutes at 180 degrees.
Sprinkle the icing sugar on top and enjoy!
This cake can also be baked in a glass jar, just reduce the baking time to about 35 minutes.
