Whenever I have a reception or party, my friends strictly request my „zeppole“. I can understand because once made, I myself eat half of them immediately, as I like them so much. The best about them: the recipe is embarrassingly easy!

Ingredients for about 20 pcs:

  • 200g Gorgonzola (the real ripe one, mature, hard and spicy)

  • 100g anchovies

  • 300g white flour

  • 1 pinch of salt

  • 1.6dl lukewarm water

  • 1 bag (7g) dry yeast

  • Oil for frying

Directions:

Sieve the flour in a bowl, add the salt and mix with a fork. Now form a hollow and add the yeast, then add the water. Wait two minutes to give the yeast a chance to react, then mix well (in your kitchen aid or by hand) until you have a smooth dough. Place the dough in a bowl, but before that you have to oil the bowl slightly with sesame oil (or olive oil) in order for the dough not to stick to the sides once it rises. Now cover with transparent film and set aside in the fridge for about 90 minutes.

Take out the dough and form about twenty small balls, about the size of the Ikea meat balls. Then take a ball, press down the center of the ball with your thumb and place a piece of cheese and a piece of anchovy in the middle, then close it carefully by re-shaping it back to the form of a ball (as shown in the clip).

Set back aside / to the fridge until your guests arrive, then fry them in hot peanut oil / frying oil for about five minutes on medium heat. I use a regular high pan and fill it with one liter of oil as I don’t have a deep-fryer. Be very careful not to set the kitchen on fire and keep your hands away from the very hot oil.

Once you are finished with eating them, make sure not to throw the oil down the drain as this is the worst thing you can do to the environment. Fill it back into the bottle (once cold) and then throw the bottle into the regular garbage.
