creamy tomato salad
I have to admit that this is a recipe from Jamie Oliver. I usually do create my own recipes, or copy them from restaurants I like, but this time I saw the Jamie Oliver show … and after trying this, I have to share it with you. It is not only very healthy due to its pure ingredients, but also extremely easy and quick to do. A light and pure dinner or starter, prepared in only five minutes.
Ingredients for two:
organic cherry tomatoes (I use a mix of yellow, red and black ones)
200g plain cottage cheese
1 TBS balsamic vinegar
2 TBS extra virgin olive oil
salt and pepper
In a bowl, mix the cottage cheese with the zests (very finely grated) of half a lemon, then add the juice of half a lemon to it, as well as a bit of salt and pepper - mix well with a spoon and set aside.
Take a separate bowl and mix the tomatoes (cut in half) with the vinegar, olive oil, basil leafs (tear up roughly with your fingers) and a bit of salt and pepper, then carefully mix with your hands. Now spoon the tomatoes on top of the cottage cheese, also add the remaining juice, then decorate with some more basil. Before eating, mix well to add the creamy texture to the tomatoes.
