Do you like banana bread? Bananas? Sweets? Well this cupcake is very moist and sweet, made with ripe bananas and a utterly divine butter cream on top! Don't use a piping bag to finish them, do it the natural way. 

Ingredients for about 10 cupcakes:

- 2 ripe bananas, smashed with a fork

- 100g butter

- 100g sugar

- 1dl milk

- 160g flour

- 1 TS baking powder

- 1 pinch salt

- 2 eggs

Butter Cream:

- 110g butter

- 260g icing sugar (sieved)

- 1 TS vanilla extract

- 2-3 TBS cream

 

For the dough, put the butter in pieces in a bowl and let it rest until it gets softened / room temperature. Add the sugar and salt and mix to a smooth paste. One by one, add the eggs, then the milk, and keep whisking. Add the mashed bananas, flour and baking powder and whisk again. 

Place in muffin forms and bake at 180 degrees for 20 minutes exactly, then let cool down. 

For the butter cream, again use the softened butter and mix with the handmixer with the icing sugar on low speed, then add the vanilla and incorporate the cream slowly, until you have a thick consistency. 

Spread the butter cream on top of the muffins. Keep in the fridge for the the cupcakes to stay moist and take out 30 minutes before serving.
