It is so easy, you just have to know how to prepare the octopus! It is a fresh and healthy summer salad made only with lemon juice, olive oil and parsley.
Measurements are according to your liking and the amount of people you make it for. Just remember that an octopus is shrinking while cooking. Also, rather take two small ones than a big one as the big ones don't taste as good!
For two people:
- half an octopus
- a bunch of parsley
- a dried chili pod
- one lemon
- "the best" olive oil
- black pepper
Fill a big deep pan with cold water, add the chili pod, the stems of the parsley, a few peppercorns and a hand full of salt (the water must be salty, like sea water). Now add the octopus and turn on the heat. Just before the water is boiling, turn down the heat and place a plate on top of the swimming octopus so the entire thing is under the water. The water should never boil, just keep it below the boiling point for ten minutes, then switch off the heat and let it sit as it is for about 50 minutes.
Meanwhile, prepare some small potatoes in the oven. Cut the small potatoes in half, sprinkle with salt, olive oil and some herbs (I took oregano) and bake in the oven at 180 degrees for about 45 minutes.
Take out the octopus and cut in small pieces. Add the potatoes, chopped parsley, the juice of the fresh lemon, some grated lemon skin as well as salt and pepper. Finish by drizzling some olive oil on top and mix well. Of course, some finely chopped garlic always goes well with seafood, so don't hesitate to make use of that!
