vanilla slices

Puff pastry, custard cream, sugar and fresh berries – all these ingredients mixed together result in an incredible climax of sweetness! It is comparable to the Swiss “Crèmeschnitte”, but the latter is very difficult to make and takes time and know-how, so here is a more simple version of it. It take a bit of time, and preparation, but be assured to impress your guests and friends, they will always ask you to do it when they visit!

 

  • 100ml whole milk

  • 100ml heavy cream

  • 1 TBS vanilla extract (or one vanilla pod)

  • 40g brown sugar

 

Heat in a pan until simmer, stir well to dissolve the sugar.

 

  • 1 egg yolk

  • 10g corn starch

 

Mix well and add to the liquid, which is still simmering. Whisk well and be careful not to bring to a real boil as otherwise the egg yolk would turn into scrambled eggs.

 

  • 1 sheet of gelatin (soaked in cold water)

 

Quickly add the gelatin sheet and keep whisking, now remove the pan from the stove and transfer into a glass bowl and let it cool down completely. Place in the fridge over night or in the freezer for about an hour, then transfer to the fridge for another two hours at least.

 

  • 1 puff pastry (square)

 

With a fork, pierce the dough in order to have literally hundreds of holes in it, very closely pierced with a fork this will take about five minutes. Now cut into the shapes you want your vanilla slices to be, like squares, rectangles, hearts, whatever you like. You have two options now: In the oven, place the flat pieces on a baking tray (using baking paper below and on top), then cover it with another tray to avoid the dough to rise, and bake at 180 degrees for about 15 to 20 minutes. Otherwise just place the dough into a non-sticking frying pan at medium heat for about 10 minutes until golden, flip from time to time. Set aside.

  • 200ml heavy cream

 

Shortly before serving, whisk the cream until stiff and mix with the cooled down custard, carefully, until smooth. Transfer into a piping bag and spread on the puff pastry squares. Add another puff pastry square on top, then another bit of the custard. Decorate with berries and sprinkle some icing sugar on top.
