This is THE hummus. Taught by family, my brothers mother in law Susan, the best arabic cook in the world! Try this simple recipe by following some important steps:

Ingredients:

- 500g chick peas (canned, cooked)

- Juice from one lemon

- 5 TBS tahini (sesame paste)

- 0.5 to 1 TS cumin (finely ground), according to liking

- 1 TS salt

- paprika to decorate

Preparation:

Pour the chick peas into a sieve and wash thoroughly, then take a handful between your hands and rub your hands slightly, until the skin of the peas separates. Try to peel as many peas as possible, as the skins will make your hummus granular and harder to digest. Set aside.

In the blender, add the tahini (shake well before using), the lemon juice and the cumin, then mix for three seconds. Add about 0.5 dl of water, and mix again for five seconds.

Only now, add the chick peas and the salt and mix well, for about one minute, until smooth. The texture should be smooth, not too dry, therefore add some more water until you have the desired texture. Taste and, if necessary, season again with cumin and salt.

Serve in a dish, sprinkle some olive oil on top, add three chick peas and dust with paprika and cumin to decorate.

Serve pita bread and enjoy!
