tuna poké bowl

This recipe has been made for my Japanese friends who love our Swiss Rösti (hash browns). Have a look at the video!

Ingredients for two:

  • 250g of Swiss Rösti (hash browns)

  • 200g yellowfin tuna (sashimi quality)

  • 40g Coriander

  • 1 Mango

  • 1 Chilli pod (no or a few seeds, finely chopped)

  • 1 TBS roasted sesame seeds

  • 4 TBS Soy sauce

  • 0,5 lemon (juice and zests, finely grated)

  • 2 TBS liquid honey

  • 1 Spring onion

  • Sesame oil

  • Edamame

  • herbs or edible flowers for decoration

 

Directions:

Cook the Rösti according to instructions.

Cut the tuna and set aside, then cut the Mango in cubes, mix it the chopped coriander and set aside as well.

For the marinade, mix the chilli with the sesame seeds, the soy sauce, honey and lemon juice and zests, then mix well with the tuna and set aside. Taste and season with a bit of salt if necessary.

Roughly chop the spring onion, the nice part of the green side and about half of the onion, and add it to the marinated tuna – mix well.

Once the Rösti is golden brown, stir it up with a fork and put some of it into a bowl. On top, on one side, add the fish, and on the other side the mango cubes. Add the edamame and decorate with sesame seeds and coriander.
