scrambled eggs & crayfish
Here we go with another power-protein-breakfast with amazing fresh flavours! The combination of lemon zests, avocado, crayfish and juicy scrambled eggs is just the best way to enjoy a healthy breakfast, especially after your early Sunday morning run or walk.
Ingredients for two:
100g crayfish or small shrimps (cooked and ready to eat)
3 big eggs
4 slices of dark whole-grain / spelt bread or any healthy bread rich in proteins, thinly sliced
A bunch of dill and cilantro
Zest of half a lemon
0.5 avocado, very ripe
Butter, salt & pepper
Finely cut the herbs and set aside. Then pour the eggs into a bowl, season with salt and pepper and whisk with a fork.
In a non-sticking frying pan, melt a bit of butter and grate some lemon zests into it, then grill your bread slices on medium to high heat on both sides for just about one minute per side until slightly dark. Distribute on a serving dish and put the thinly sliced avocado on top.
Add some more butter to the pan, and pour the egg-mix into it, on medium heat. With a wooden spatula, stir the eggs. Be careful not to have too much heat, better switch off the stove and use the remaining heat as otherwise the eggs will dry out. Quickly add the crayfish and keep on stirring, then transfer into a bowl.
Now distribute the scrambled eggs on the avocado bread, sprinkle some more lemon zest on top, together with the finely chopped herbs.
With good preparations, you can prepare this dish in just ten minutes. Enjoy!
