ah-hua's 38

Ah-hua is an asian restaurant in Zurich, with a great signature dish all guests are aware of. It’s a spicy chicken dish with cashews and onions. The sauce is the secret, a mixture of authentic asian ingredients. You find all of them in Asian food shops, but attention, one ingredient is key: Nam Prik Pao, a sweet chilli jam, it makes all the difference in taste. Here you go with the recipe:

Ingredients for 2 people:

  • 2 chicken breasts

  • 1 spring onion

  • 1 zucchetti

  • some brocoli or asian broccolini (the thin and long ones)

  • A hand full of cashews

  • 1 chili (no seeds)

  • Fresh coriander to decorate

Sauce:

  • 2 heaped table spoons of Nam Prik Pao (see picture below)

  • 1 heaped table spoon of oyster sauce

  • 1 table spoon of fish sauce (or a little less)

  • 1 table spoon of sesame oil

  • 1 table spoon of soy sauce

  • 2 tea spoons of brown sugar

  • 1 tea spoon of corn starch

Chicken marinade:

  • 1 table spoon of soy sauce

  • 1 tea spoon of ginger powder

  • 1 tea spoon of coriander powder

  • 1 table spoon of sesame oil


In a non-sticking frying pan, roast the cashews without any fat until golden. I prefer tor rougly chop them, but you can leave them whole if you prefer. Set aside.

Cut the chicken breasts into cubes and marinade for at least one hour, set aside in the fridge.

Cut the vegetables and fry in a frying pan in some olive oil, set aside.

Mix the incredients of the sauce in a bowl, stir well with a whisk in order to have a thick and smooth sauce.

Panfry the chicken pieces in some sesame oil on high heat for about two minutes per side, then add the sauce, stir and let simmer for about five minutes. Now add the vegetables, stir again and serve with rice.

Sprinkle the roasted cashews on top and decorate with some chili flakes or coriander.
