A very easy and quick sweet treat!

With a sharp knife, make an incision into the dates, remove the pit and slightly open the dates with your fingers in order to have room for the filling.

With two spoons, add a big drop of almond mousse (if the almond mousse is too liquid, place in the fridget for a bit before using) into each date. Make sure to use natural almond mousse without added sugar.

In a bain-marie, heat and melt 200g of chocolate, then add a teaspoon of butter and mix until all is liquid. With two spoons, drop one date into the chocolate and make sure it is covered with chocolate all around, then set aside on baking paper. Immediately sprinkle some salted pistachios on top. Repeat until all dates are done.

You can keep them for at least two weeks in the fridge, in a closed tupperware. Remember, these are all vegan treats with no additional sugar, so very healthy.
