wontons in spicy sauce

This is my absolute favorite dish at the famous Din Tai Fung restaurant in Asia. They are all over the place, and the one in Hong Kong got a Michelin star. Whenever travelling in Asia, Din Tai Fung is an absolute must!

The recipe of these Wontons, but especially of the sauce that comes with it, was hard research work of myself and of my friend Sylvia, and after many tests we finally managed to get VERY close!

So here is the recipe:

Ingredients:

  • Wonton dough (bought these little square dough patties at the asia store)

  • 500g minced pork meat (best is fatty porkbelly, minced twice)

  • You can use pork and shrimps mixed as well, or chopped raw shrimps instead

  • 1 TBS sesame oil

  • 1 dl water

  • some white pepper

  • 1 TBS soy sauce

  • a pinch of salt

Add little by little the water while stirring with chopsticks (or a fork) to slowly incorporate the water. Then add the other ingredients and set aside.


For the sauce, there are two sauces that are combined at the end.

Ingredients and directions for sauce Nr. 1:

  • 250ml of soy sauce

  • some slices of ginger

  • 100g of sugar

  • a stick of cinnamon

Bring to a boil and then simmer for about one hour. Set aside.

Ingredients and directions for sauce Nr. 2:

  • 250ml of sunflower oil

  • some slices of ginger

  • 2 spring onions, roughly chopped

  • a handful of dried chillies

  • 1 TBS of sechuan pepper

  • 30g of chili powder (I use 15g of chilli and 15g of mild paprika as otherwise it gets really spicy!)

Bring the oil to a simmer (it should not fully boil as otherwise its cancerageous), add all the ingredients except the chili powder and let it simmer for about an hour in order for all the flavors to absorb. At the end, add the chilli powder, stir well and transfer to a bowl. Now let the chilli set to the ground.

Mix the two sauces according to your liking and according to the spice level you want. I usually do 50/50 of each sauce.

For the wontons, fold the store-bought dough - here is a sample video I found on youtube: (https://www.youtube.com/watch?v=CrjFoOddNk8) and cook the in simmering / slightly boiling water for about 7-8 minutes.

Sprinkle finely chopped spring onion on top as well as some toasted sesame seeds.
